ISO: Recipe for stuffing and gravy

Hi,

I would like a simple traditional recipe for stuffing. One that will cook
well in the bird and in a casserole dish without drying out. Also, I
am making my gravy a day ahead and have 2litres of fresh frozen chicken stock
prepared to make gravy. Any recipes or techniques would be appreciated
as this is a weakness of mine.
