I sure hope that you and Simon enjoy the salad. Even though, yesterday wasn't all that hot, it sure felt really uncomfortable with all of the humidity:-( When the temperatures were above 90 degrees F, the heat index, here, was 105 degrees F. (The heat index is what it feels like to a human when the meteorologists figure the temperature combined with the humidity - or something like that.) During that "heat wave" we had out air conditioning going constantly but we had turned it off when it got cooler, so yesterday, for me, it was too hot to think, nevermind trying to cook:-(! This seemed to be the best thing for dinner.
BTW, It's great to hear from you:-) I hope that you and Simon are having a terrific summer!
