Of course, I had to petition the chef because the duck was not in the Menu. With all due respect, Chefs are similar to famous opera singers, they hate unexpected events, and they are Prima donna's. For a famous chef to obligue in this kind of unexpected petition is a great honor and as such I was greatly honored and releived for his concession. Also, they never give the recipe. They hate to give recipes because I suspect that they are virtuosos that invent on the spur of the moment. Therefore, if they like you and know you enough, they give an idea and from there you have to complete. Oh my, I wish someday to have the knowledge and glamour of at least a sous chef.
