Re: Sea Foam Candy

This is my grandmothers recipe and we still use it today.

2 cups sugar
1/2 cup water
ltsp vanilla-real stuff if you have it.. Lots of times we didn't or left it out
2 egg whites
dash or pinch of salt- about 1/8 tsp
pinch of cream of tartar if you have it or leave it out.

Combine sugar, water, salt and cream of tartar. Cover and boil about 5 minutes.
Uncover and wipe down sides of pan with a damp cloth.
Boil without stirring to firm ball stage (245-248F)
Pour slowly, beating constantly, over stiffly beat egg whites. Takes a while to do this.
Add flavoring.
Continue beating until candy holds its shape when dropped form a spoon.
Drop by spoonfuls onto waxed paper.
Food coloring may be added. we always did at christmas either red or green.
My mother always placed a nut(english walnut) on the top.
