Recipe: Hearty Scrambled Eggs

Hearty Scrambled Eggs
Yield: 4 to 6 servings

(These make a great addition to any breakfast or brunch meal, or fill flour tortillas to make an easy Breakfast Burrito)

In a bowl, beat together:

12 eggs
1/3 c. milk

Add:

1 1/2 c. diced cooked ham
1 c. shredded Colby Jack cheese
1 c. sliced fresh mushrooms
3 green onions, thinly sliced
(green part included)
1/2 t. salt
1/4 t. pepper

In a skillet over medium heat, melt: 3 T. butter

Add egg mixture.

Cook and stir until eggs are completely set and cheese is melted.
