Curried Chicken and Nectarine Salad Sandwich

Servings: 1

1/4 cup mayonnaise
1/2 tsp. curry powder
Pinch of salt
Pinch of cayenne pepper
Juice of 1/2 lime
1 1/2 cups cooked chicken breast, cubed Salt and pepper to taste
1 ripe nectarine, diced
1/3 cup water chestnuts, diced
1/4 cup raisins
1 green onion, sliced
2 slices raisin bread

Blend mayonnaise, curry powder, salt, cayenne pepper and lime juice. Stir in chicken breast, nectarine, water chestnuts, raisins and green onion. Season with salt and pepper. Spoon chicken and nectarine salad onto slice of raisin bread. Top with remaining slice.
