Recipe: Chuck and Salad Pockets

Chuck and Salad Pockets

Fills 10 plus pockets

1 lb. ground chuck, cooked
1 head lettuce
1/2 can black pitted olives
1 cup shredded carrots
1 cup shredded Cheddar cheese
any other salad ingredients you choose, like peppers, onion, celery
salad dressing (my favorite dressing for these is Catalina)
1 pkg. whole wheat pita bread

Mix together all salad ingredients, thinly sliced or chopped. Chop olives and add to salad.

When ready to serve, cut pita bread in half to form pockets. Add chopped beef to salad mixture. Add cheese to salad mixture. Stuff salad into pockets. Serve cold or put in oven long enough to melt cheese. Top with salad dressing.
