Recipe: Sour cream and Potato Casserole

Sour cream and Potato Casserole

This is my cousins recipe (Sidenote: most people like this - kind of like a baked potato already dressed).

5 or 6 Potatoes
1 (8 oz) carton sour cream
1 envelope "original" Ranch dressing mix
Cheese

Make mashed or creamed potatoes as you normally would.
Add the sour cream and dressing mix - mix well.
Put into a casserole dish and bake at 350 for about 30 min, until bubbly and slightly brown on edges. Add cheese on top and bake until cheese is melted.

*Can be multiplied successfully - I've quadrupled it for picnics and it works well. Cheddar is a good cheese to use, but use whatever you like on a baked potato. Also, in a pinch I've used those instant potatoes with good results.
