15 MINUTE MACARONI AND CHEESE
4 cups uncooked macaroni (elbow macaroni or similar size)
1/2 cup skim milk powder
1 tablespoon cornstarch
1/2 teaspoon dry mustard
1/4 teaspoon pepper
1 pinch salt
Add-Ins (optional, list follows)
2 cups shredded cheddar cheese
2 tablespoons freshly shredded parmesan cheese
In a large pot of boiling water cook macaroni for 6-8 minutes or until tender but firm. Drain reserving 1 1/2 cups cooking liquid; set pasta aside.
Pour reserved pasta liquid into a pot and return to medium high heat; whisk in skim milk powder, cornstarch, mustard, pepper and salt. Bring just to a boil.
Remove from heat, add pasta and toss to coat. Stir in Add-In, if desired. Add cheeses and stir until melted.
ADD-INS:
4 green onions sliced
1/2 cup chopped rehydrated sun dried tomatoes
2 cans (6 ounces each) water packed tuna, drained and flaked
1/2 cup pepperoni, chopped
1 cup diced cooked ham
Makes 4 servings
