Recipe: Appetizer Quiche (using shrimp and Swiss cheese)

1 1/2 cups shredded Swiss cheese
1 (4 1/2 oz) can shrimp, well-drained, chopped
1 (9-inch) unbaked pie shell
3 eggs
1 1/2 cups light cream or half-and-half
1 tbsp chopped chives
3/4 tsp salt
1/2 tsp dry mustard
dash nutmeg
1/4 cup grated parmesan cheese
Preheat oven to 375 degrees F.
Sprinkle Swiss cheese, then shrimp over bottom of pie shell.
Beat eggs, cream, chives, salt, dry mustard and nutmeg. Pour into pie shell. Sprinkle with Parmesan cheese.
Bake in a preheated 375 degree F oven 30-35 minutes or until a knife inserted near center comes out clean. Let stand 20 minutes before serving.
Cut into squares. Serve warm or chilled.
