Apple Cranberry Maple Crumble

Serves 4

4 McIntosh apples
1 tbsp quick-cooking tapioca (you can substitute flour however the texture will not be as smooth)
1/3 cup maple syrup
1 cup cranberries
1/2 cup rolled oats
1/4 cup all-purpose flour
1/4 cup brown sugar
1/4 cup unsalted butter

Preheat oven to 375 F. Peel, core and slice the apples into eighths. In a medium bowl, combine the tapioca and maple syrup. Add the apples and cranberries and toss to coat the fruit. Spread in a buttered 4-cup (1 L) baking dish.

In the same bowl, combine the oats, flour and brown sugar. Cut in the
butter until the mixture resembles coarse breadcrumbs. Sprinkle over the fruit. Bake for 30 minutes, or until the top is golden.
