Sister's Squash Casserole

4 lbs. yellow squash, cut into 1/4 inch slices
2 T. butter
1 large onion, finely chopped
2 garlic cloves, crushed
1 can cream of mushroom
1 c. shredded sharp cheddar
2 large eggs, beaten
1 t. pepper
1/2 t. black pepper
paprika for dusting top
Cook squash in boiling water for 10 minutes til tender. Drain very well. Melt butter in a skillet and saute onions til tender and beginning to color. Add garlic and cook 2 more minutes.
Combine onion mixture with squash and remaining ingredients except the paprika. Mix well and spoon into a lightly greased 11x7 inch baking dish. Dust top with paprika and bake at 350 for 30 minutes til bubbly.
