Recipe: Apple Fritters (Amish Yeast Apple Fritters) (2) and Appelbeignets (Dutch Apple Fritters)

2 tbsp. yeast
1/2 cup lukewarm water
1 egg, beaten
2 tbsp. sugar
1 tbsp. shortening, melted
1/2 tsp. salt
1 1/2 cup sifted flour
1 cup chopped apples (soak apples in lemon juice before chopping)
powdered sugar (for tops)
Soften yeast in lukewarm water.
Mix egg, sugar, melted shortening, and salt into yeast mixture. Stir in sifted flour. Let rise 40 minutes.
Preheat fat or oil for deep frying to 370-375 degrees F.
Stir down dough and mix in chopped apples.
Drop batter by rounding teaspoon into hot fat or oil, 370 to 375 degrees. Fry to golden brown.
Sprinkle with sugar.

2 to 3 cups slices apples
1 teaspoon lemon juice
oil or shortening for frying
cinnamon and powdered sugar
Cream together sugar and eggs.
Add flour and baking powder, then milk; mix.
Add apples and lemon juice.
Heat oil or shortening in a frying pan (as for pancakes).
Drop by teaspoonfuls into hot shortening or make into little cakes and fry in a pan like pancakes.
Sprinkle with powdered sugar and cinnamon.
APPELBEIGNETS (DUTCH APPLE FRITTERS)

8 large apples peeled, cored
2 cups all-purpose flour, sifted
12 oz ale
1/2 tsp salt
oil, lard, or shortening
confectioners' sugar
Slice the peeled and cored apples or cut into rounds at 1/3-inch thick.
Combine flour, ale, and salt with whisk, until mixture is smooth. Dip apple slices in mixture.
Heat deep fat or in 1 inch of oil in heavy skillet to 370 degrees F frying temperature.
Fry apple slices in the hot oil. Drain.
Sprinkle with confectioners' sugar. Serve immediately.
