Cheesy Cauliflower
From: Amy,.Oh

This was a great recipe even the kids loved. (I have 3 boys 8, 6, & 4). I'm sure it would work well with broccoli also.

1 large head of cauliflower,
broken into small flowerets.
1/2 C. Butter, melted
1/4 C. grated Parmesan cheese
2/3 C. Italian seasoned bread crumbs
1/4 tsp. salt
1/2 tsp. crushed red pepper flakes
1 C. Cheddar cheese, shredded.

1. Preheat oven to 350 degrees F (175 degrees C)
2. Bring a pot of water to a boil. Add cauliflower and cook for about 10 min. Drain and place in a greased 2 quart casserole dish.
3. In a small bowl combine butter, Parmesan Cheese, bread crumbs, salt, and red pepper flakes. Sprinkle mixture over casserole and top with Cheddar cheese.
4. Bake in preheated oven for 20 minutes, or until cheese is melted and bubbly.

Even the pickiest veggie eaters will love this one!
