Recipe: Pumpkin Dessert (using cake mix)

PUMPKIN DESSERT

"Not quite a cake, not quite a pie, but a rich and yummy holiday dessert!"

1 box (Duncan Hines) yellow cake mix
1/2 cup margarine or butter
1 egg

Reserve 1 cup of the cake mix, put the rest in a medium mixing bowl. Melt margarine, add to mix. Add egg. Mix well. Press mixture into bottom of a greased 9x13-inch pan.

1 (16 oz.) can plain pumpkin
3 eggs, beaten
2/3 cup evaporated milk
1/2 cup brown sugar
2 tsp. ground cinnamon

Combine above ingredients, mix well, and pour over cake mixture in pan.

1 cup reserved dry cake mix
3/4 cup white granulated sugar
2 Tbsp. butter

Combine as for piecrust (eg, mix by "cutting" dry ingredients into shortening with 2 table knives or with a fork until a crumbly mixture is obtained) and sprinkle over pumpkin.

Bake at 350 degrees F for 50 minutes. Pumpkin should be "set" as for pumpkin pie.
