Recipe: Poached Apples with Cranberry-Cinnamon Sauce

Desserts - Fruit
Poached Apples with Cranberry-Cinnamon Sauce

4 medium baking apples
1/2 cup plus 1/3 cup sugar
1 cup fresh cranberries (about 4 oz)
1/4 teaspoon cinnamon

Wash and core the apples. Place them in a large saucepan with 1/2 cup of sugar and 2 1/2 cups water. Bring to a boil. Reduce heat to low, cover and simmer 10 minutes or until the apples are just tender. Baste them with the syrup in the pan occasionally.

Meanwhile, in a medium saucepan heat the cranberries, cinnamon, 2/3 cup water, and 1/3 cup of sugar over medium heat. Simmer gently for 10 minutes. Cool the mixture slightly and puree in a blender or food processor until smooth.

To serve, pour sauce on apples and into cored centers.
