Baked Green Tomatoes
Recipe By :Terry Ward

3 medium green tomatoes -- sliced 1/4" thick
2 egg whites -- lightly beaten
1/4 cup self-rising cornmeal
2 tablespoons grated Parmesan cheese
1/2 teaspoon garlic powder
salt and pepper -- to taste

Coat a baking sheet with cooking spray. Dip slices in egg white and dredge in cornmeal mixture. Place on baking sheet. Spray tomatoes lightly with cooking spray. Broil until nicely browned, turn slices over and broil until browned.
