Recipe: Barbequed Baked Chicken Pita/Sandwich

Barbequed Baked Chicken Pita/Sandwich

My sons love this and it is lowfat (if you use nonfat cheese) and delicious:

1. Mix cooked and shredded chicken breasts with chopped red onion and barbeque sauce (nonfat).

2. Put in pita pocket with nonfat cheese (mozzarella).

3. Bake 400 degrees for 6 - 10 minutes depending on how crunchy you like the pita bread. Turn halfway through cooking time.

I bake these on a baking stone, but a cookie sheet would probably work just as well. I also make the same thing and substitute whole wheat bread for the pita bread. The baking stone toasts the bread nicely. My husband loves it this way.
