Recipe(tried): Hearty Italian Sausage, Spinach and Pasta Soup
Soups We're big soup fans! Soups are so easy, you just prepare them and walk away!! This one is an Italian vegetable soup that we just love! Enjoy!
Hearty Italian Sausage, Spinach and Pasta Soup
1 package Johnsonville Hot Italian Sausage Links
1 Onion, Chopped
3 Cloves Garlic, Minced
1 Green Bell Pepper, Chopped
3 Cups Chicken Stock
1 Can Diced Tomatoes
1/2 C Dried White (GN) Beans
8 Oz. spiral pasta
1/2 C Chopped Red Bell Pepper
1 10oz. pkg. Frozen Spinach
Dried oregano, Basil, and Thyme to taste
Garlic Salt, Pepper, Red Pepper to taste
Dash of Tabasco
Wash and drain the dried beans; Cover with water in a saucepan and bring to a boil; Remove from heat, cover and let sit for at least 1 hour.
Cook pasta according to package directions and set aside. Do not overcook (You may even want to undercook it).
Remove sausage from casings and brown. Drain sausage and add onion, garlic, and green bell pepper. Saute until onion is tender. Add Seasonings and tabasco. Add tomatoes and chicken stock. Bring to a boil.
Add White Beans, red bell pepper and spinach. (You may add a little water if needed) Reduce heat to a simmer and cook for about 30 - 45 mins or until beans are crisp tender. ( I don't like my beans to be very soft). Add Pasta, adjust seasonings, and cook for another 10 mins.
Serve the Soup topped with freshly grated mozzarella and Crusty French Bread!
