SEAFOOD WILD RICE SALAD
SALAD:
3 cups cooked wild rice
1/2 pound fresh lump crabmeat, drained and flaked
1 large tomato, peeled, seeded, and chopped
1 cup thinly sliced celery
1/2 cup chopped green onions
1/4 tsp salt
1/8 tsp pepper
DRESSING:
1/3 cup mayonnaise
1/3 cup sour cream
1/4 cup chili sauce
1 tbsp lemon juice
1 tsp Dijon mustard
TO SERVE:
Lettuce leaves
Fresh parsley sprigs
In a large bowl combine the salad ingredients; toss well.
In separate bowl, combine dressing ingredients and stir well. Add the dressing to the wild rice mixture; stirring well. Cover and chill.
To serve, spoon salad onto lettuce leaves. Garnish with parsley sprigs.
Yield: 6 servings
