BBQ Pot Roast
4 to 5 lbs beef pot roast
2 teaspoons salt
1/4 teaspoon pepper
2 tablespoons butter
1/2 cup water
1 can tomato sauce -- (8 oz)
3 medium onions
2 cloves garlic
2 tablespoons brown sugar
1/2 teaspoon dry mustard
1/4 cup vinegar
1/4 cup ketchup
1/4 cup lemon juice
1 tablespoon Worcestershire sauce
Rub roast with salt and pepper. Brown on all sides in melted butter. Add water, tomato sauce, sliced onions, and finely chopped garlic. Cover and cook over low heat for 1 1/2 hours. Mix remaining ingredients together and pour over pot roast. Cook slowly for another 1 1/2 hours, or until very tender.
