Recipe: Black-Eyed Pea Salad

Black-Eyed Pea Salad

My sister made this recently and shared it with me. It's a keeper! This recipe gets raves wherever it's served!

1 large tomato, seeded and chopped
1 green bell pepper, chopped
2 green onions, sliced
6 fresh mushrooms, sliced
1 clove garlic, minced
2 (16 oz.) cans black-eyed peas, rinsed and drained
1 cup diced celery
1 (4 oz.) jar diced pimento, drained
1 (8 0z.) bottle reduced cal. Italian dressing
(I used Wishbone Lite for counts below)
Lettuce and red cabbage leaves to line platter
2 Tbsp. cooked, crumbled bacon
1/3 cup green onions, sliced

Place tomato, pepper, the 2 green onions, mushrooms and garlic in a large bowl. Stir in peas and next 3 ingredients. Cover and chill, stirring occasionally, 8 hours. Drain salad and spoon onto a lettuce-lined platter. Sprinkle with bacon and 1/3 cup green onions.

Yield: 8 servings
Per serving: 70 calories, 12.5 gms carbs, 1.2 gms fat (before draining)
