Dad's Sausage
2 lbs. ground pork
1/2 tsp. ginger
1/2 tsp. nutmeg
1/2 tsp. coriander
1 tsp. sage
1/2 tsp. thyme
1/2 tsp. pepper
1 1/2 tsp. salt (or Morton Lite)
5 - 10 drops hot pepper sauce, to taste
Mix all together, add a little water if necessary. Fry in patties, or loose. Gets more flavourful as it sits.
