Low Fat Stir Fried Rice

Here is a recipe for stir fried rice, without oil ;)
I am just going to start with a cup of uncooked rice. This
makes a good bit, but you can make more or less as you please. Really, you
will see I don't tend to give amounts, that is because this recipe is just
a throw together kind of thing.
You will need:
Cooked rice
1 onion
1/2-1 Green pepper
1-2 carrots
(and or any other vegetables you like)
2 egg whites or some egg substitute (if you like, you can leave this out if you are avoiding animal products)
(If you are in a rush, just grab frozen mixed vegetables and use those
along with the onion)
Spices:
Fresh Garlic (I use a lot, but use to taste)
Tabasco sauce (if you are brave ;) )
Pepper
Soy Sauce
Salt (if you like)
And any other spices you care to throw in
To cook it I use a wok. A heavy skillet works well too, but watch the sticking. You might even want to break things into groups and cook them separately and then add everything together. This is best if you want to use a non-stick skillet.
Something to "fry" with...
I use red wine. I like the slight flavor it adds. you can use any kind. I do not suggest water for this.
Throw vegetables in the wok with some wine, cook them a while. Pour the rice in (normally still warm as it would happen) cook that a while, at some spices, move everything off to the side of the wok and cook the eggs. Add some more spices, stir it all up, let it simmer 5- 10 minutes or until too hungry to wait anymore ;) (you should cover it while it simmers and stir it every so often)
This is a great dish to make a lot of and then to bring to work in a microwaveable container. I am sorry the directions are not more specific but that's the way I cook ;)
