Bran Muffins (using bran chex cereal)

Makes 12
2 cups Bran Chex cereal
1 cup milk
1/3 cup packed brown sugar
1 egg
3 tablespoons vegetable oil
1 cup sifted flour
2 teaspoons baking powder
1/2 teaspoon salt
Preheat oven to 400 degrees. Coat 12 medium muffin cups with nonstick vegetable spray or shortening.
Mix together Chex, milk, brown sugar, egg and oil. Let stand 10 minutes; stir.
Meanwhile, combine flour, baking powder and salt. Add bran mixture all at once. Stir only until moistened. Fill muffin cups 2/3 full.
Bake 20-25 minutes or until lightly browned.
NOTES : Variations: Stir in 1/2 cup snipped dates OR prunes when adding bran mixture to dry ingredients.
