FRESH APPLE CINNAMON MUFFINS
1 1/2 cups flour
1/2 cup dry nonfat milk
1/3 cup sugar
2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
1 egg
1/2 cup cold water
1 cup peeled apples -- finely chopped
1/4 cup melted butter
1/3 cup chopped nuts
1/4 cup firmly packed brown sugar
Combine flour, dry milk, sugar, baking powder, 1/2 teaspoon cinnamon and salt in large bowl.
Beat egg with water. Stir in apple and butter. Add all at once to flour mixture. Stir just until moistened (batter will be very stiff). Fill 12 buttered 2 1/2-inch muffin cups 2/3 full.
Combine nuts, brown sugar and remaining 1/2 teaspoon cinnamon. Sprinkle over each muffin.
Bake at 375 degrees for 15-20 min. Remove from pan immediately. Serve warm.
