Recipe: Bread Dumplings

Here's a recipe, but I think it is more Austrian than Norwegian. Anyway, perhaps it will work for you. I haven't tried it.

Bread Dumplings

4 oz diced stale bread
1 teaspoon butter
1 egg
1/2 cup milk
3/4 cup flour
2 teaspoon chopped parsley

Salt and pepper

Heat the butter and fry the bread lightly in it. Mix the egg and the milk together. Put the fried bread into a large bowl and pour the egg mixture over it. Add the flour, parsley and salt and pepper to the bread and set aside for 30 minutes. Roll the dough into 12 small balls.

Bring soup to boiling and drop dumplings in. Simmer for 15 minutes.

You can also cook the dumplings in boiling salted water if desired.
