Recipe: Buttermilk Mashed Potatoes

Buttermilk Mashed Potatoes
Yield: 8 Servings

3 lb potatoes
1 1/2 c buttermilk
1/4 c butter
1 ts salt
1/2 ts black pepper

Peel 3 lbs. Potatoes and cut into cubes 1/2-inch square. Place in a 4 quart sauce pan with enough water to cover and bring to a boil. Lower heat and simmer for about 15 minutes or until potatoes are tender. Drain water from potatoes and place them in a large bowl. Add buttermilk, salt, pepper and butter. Beat with an electric mixer on medium speed until smooth and creamy. Place in serving dish and dot with butter.
