Candy Easter Eggs

1/4 lb butter
1/2 cup mashed potatoes
2 lbs confectioners sugar
1 tsp vanilla
For Flavors:
1/2 cup coconut
1/2 cup diced candied fruit
1/2 cup chopped nuts
1/4 cup peanut butter
1/4 cup maraschino cherries
1/4 cup sliced almonds
chopped mints or chocolate chips
Peel, then boil potatoes in salted water until soft.
Drain and mash potatoes Measure 1/2 cup of mashed potatoes.
Blend butter with potatoes and let mixture stand until cold.
Add sugar and vanilla to potato butter mixture and blend until creamy.
Divide fondant into 4 bowls, and to each bowl add flavor of liking.
Mold into desired shapes and chill for 1 hour, then dip in chocolate coating.
To Make Chocolate Coating:
1/2 lb bitter chocolate
1 Tbsp melted paraffin wax
Melt bitter chocolate in top of double boiler over hot water.
Stir melted paraffin into chocolate.
Cool, then dip candy eggs into the chocolate. Place the eggs on waxed paper.
Another Tip: Decorate after cooling, then wrap in cellophane
