Recipe: Caramel Apple Coffee Cake
Breakfast and BrunchAnother Pampered Chef recipe.
Caramel Apple Coffee Cake
1/2 Cup brown sugar
1/4 Cup butter (1/2 of a stick)
2 tablespoons light corn syrup
1 Granny Smith apple
1/2 Cup chopped walnuts or pecans
2 tubes refrigerator biscuits (7-8 oz. each)
1/2 Cup cinnamon sugar (1/2 Cup sugar with cinnamon to taste)
Melt the butter in the 1-quart Batter Bowl in the microwave and then mix in the brown sugar and corn syrup.
Spray the inside of the Deep Dish Baker with a touch of PAM if the stoneware is new and not yet seasoned. Pour the butter/brown sugar mixture into the Deep Dish Baker and spread to cover the bottom of the dish. Sprinkle the chopped nuts over the butter/brown sugar layer. Use the Apple, Peeler, Corer, Slicer to prepare an apple to layer over the chopped nuts. Fan the apple slices over the nuts to make a spiral design. Dip each refrigerator biscuit in the cinnamon sugar mixture and then place in the Deep Dish Baker on top of the apple, covering the entire surface of the dish. Sprinkle the remaining cinnamon-sugar mixture over the top.
Bake at 375F for 25-30 minutes.
