Recipe: Cider Braised Pork Chops

Cider Braised Pork Chops

1-4 boneless pork chops
2 tablespoon oil
1 quart apple cider
salt
pepper
nutmeg

In frying pan, heat oil on medium high. Add pork chops and brown quickly. As they brown sprinkle salt, pepper, nutmeg to taste. (Just coat them nicely.) Reduce heat to medium low. Add apple cider until it just comes over the pork chops. Cover. Simmer for 1 hour, turning
once or twice. It is important to keep it covered or the cider will evaporate leaving a guncky mess. You may need to add a little more cider at the half-way point. Serve with veggies, potatoes and of course, apple sauce. - rec.food.cooking/Paul Fitch/1996
