Recipe: Ginger Ham with Sweet Potato

Ginger Ham with Sweet Potato
Servings: 4

2 sweet potatoes -- peeled and thickly s
4 ham steaks
2 tsp butter
1 tsp ground ginger
2 tsp brown sugar
1 tbsp chopped preserved ginger
1/4 cup fruit juice (orange, pineapple, apricot)

Cook sweet potato in lightly salted boiling water until tender, about 10 minutes. Drain well. Place ham steaks in a flat casserole dish and arrange sweet potato slices around them. Mix together butter, brown sugar and ginger and spread over ham. Pour fruit juice around ham. Bake in hot oven 400 F (200 C) basting several times with juice. - rec.food.cooking/Sheri McRae/1996
