Bachelor Chicken
Take chicken breasts (boneless or not) and lay them in a baking dish. It helps if they're thawed, but it's not necessary. You do want to get the skin off, though.
Smear with a teaspoon of butter. Sprinkle lightly with pepper and/or thyme if you have it.
Sprinkle with breadcrumbs, I like Progresso Italian flavored myself. Cover them about 1/4-inch deep.
Bake at 350F for 30-40 minutes, or until chicken is firm and crumb topping is golden brown.
