Desserts - Puddings, GelatinI have been unable to locate my recipe, but it was like the first one listed below, but with the sauce of the krispy creme one. It really was wonderful. I omitted the raisins, and just used cubed homemade sourdough cinnamon raisin bread.
CINNAMON BREAD PUDDING WITH WHISKEY SAUCE
BREAD PUDDING:
2 1/2 cups hot skim milk
3/4 cup sugar
2 egg whites
2 eggs
1/4 cup raisins or dried currants
5 cups cinnamon bread pieces (1-inch)
1/4 cup nonfat vanilla yogurt
WHISKEY SAUCE:
1 cup sugar
1 cup water
1/4 cup whiskey*
BREAD PUDDING:
Preheat oven to 375F. Butter (or non-stick spray) a 13x9x2-inch (3 quart) baking dish.
Combine bread cubes and raisins in buttered dish.
In medium bowl, combine eggs, egg whites and 3/4 cup sugar; beat well.
Add hot milk. Mix well. Pour mixture over bread and raisins; let stand 5 minutes.
Stir gently and bake for 25-35 minutes or until liquid is absorbed.
WHISKEY SAUCE:
Meanwhile, in a small saucepan, combine 1 cup sugar and water; mix well. Bring to a boil and boil for 5 minutes.
Remove from heat; stir in whiskey. Cool to lukewarm.
Stir in yogurt.
Serve warm bread pudding with warm sauce.
*TIP: To substitute for whiskey, use 1/4 cup water and 1 teaspoon brandy extract.
CALORIE COMMANDO BREAD PUDDING WITH BOURBON

4 cups cinnamon raisin bread cubes
1 (10-ounce) can non-fat sweetened condensed milk
1 cup egg substitute
1/2 cup raisins
2 tablespoons light butter, melted
2 tablespoons ground cinnamon
3/4 cup sugar substitute (recommended: Splenda)
2 tablespoons cornstarch
1/4 cup bourbon
Allow bread cubes to dry out overnight, or place in a 250 degree F oven until dried.
Preheat oven to 350 degrees F.
In a medium bowl, combine sweetened condensed milk, egg substitute, raisins, butter, and cinnamon and whisk well. Add bread cubes and stir to coat.
Pour mixture into a 2-quart casserole dish and bake until a knife comes out clean, about 45 minutes.
While bread pudding is baking, combine sugar substitute and cornstarch in a food processor until well combined; set aside.
Remove bread pudding from heat and pour bourbon over top. Sprinkle the sugar mixture over top. Let cool slightly and then cut into pieces.
BILL NICHOLSON'S KRISPY KREME BREAD PUDDING
WITH BUTTER RUM SAUCE

2 dozen Krispy Kreme donuts
1 (14-ounce) can sweetened condensed milk (not evaporated)
2 (4.5-ounce) cans fruit cocktail (undrained)
1 (9-ounce) box raisins
2 eggs, beaten
1 or 2 teaspoons ground cinnamon
1 pinch salt
Butter Rum Sauce, recipe follows
Preheat oven to 350 degrees F. Butter a 1 1/2 quart casserole.
Cube donuts into a large bowl. Pour other ingredients except Butter Rum Sauce on top of donuts and let soak for a few minutes.
Mix all ingredients together until donuts have soaked up the liquid as much as possible. Pour into prepared dish.
Bake for about 1 hour until center has jelled. Top with Butter Rum Sauce.
BUTTER RUM SAUCE:
1 stick (1/2 cup) butter
1 pound box confectioners' sugar
Rum, to taste
Melt butter and slowly stir in confectioners' sugar. Add rum and heat until bubbly. Pour over each serving of Krispy Kreme Bread Pudding.
