Cinnamon Potato Rolls
1/2 cup sugar
3/4 cup mashed Maine potatoes
1 1/2 cups warm water
2 pkg dry yeast
1/3 cup margarine (low fat)
2 eggs (or egg substitute equivalent to 2 eggs)
1 tsp salt
6 to 7 cups flour
1 cup brown sugar
1 tsp cinnamon
2 Tbsp low fat margarine, melted
raisins (optional)
Combine sugar and potatoes. Add water and yeast, mix well. Add margarine, eggs, and salt. Gradually stir in flour, knead. Let rise.
Divide dough roll into a 12x12-inch square. Brush with margarine - sprinkle cinnamon and brown sugar mixture. Roll jelly roll style. Cut and place in greased pan. Let raise again covered.
Bake at 350 degrees for 20-25 minutes. Drizzle with confectioner sugar icing after baking.
