Recipe: Citrus Spiced Honey (canning recipe)

Citrus Spiced Honey

1 quart Honey
6 to 8 dried lemon slices
4 Cinnamon sticks (broken up coarsely)
16 whole cloves
6 to 8 1/2 pint canning jars (sterilized) Labels for the finished jars.

In a heavy large sauce pan, add honey, cinnamon, and lemon slices. Heat to a simmer. Let simmer for 5 minutes. Remove from the heat. Place 2 cloves to every canning jar. Take slices of lemon from honey mix, and add one to each jar. Fill the jars with the honey and cinnamon, leaving a quarter inch head space. Place sterile caps and lids on the jars. Process in a water bath canning pot for 10 minutes. Allow to cool, and label the jars. This recipe yields Aprox. 8 half pints. Use this honey in baking, over ice cream, or in hot tea.
