COLD CRAB STUFFED AVOCADOS
Cool and delicious hot weather meal.
1/2 cup mayonnaise
2 tbsp catsup
1 tbsp milk
1 to 2 tsp, (or to taste) cayenne pepper sauce, such as Tabasco
1 tsp fresh lemon juice
1 hard boiled egg, grated
1 lb fresh lump crab meat (or imitation, if you prefer)
TO SERVE:
3 large, ripe avocados, peeled and halved
1 medium ripe tomato, cut into 6 wedges
1 bunch watercress
Chopped parsley
In a mixing bowl, mix together the mayonnaise, catsup, milk, pepper sauce, and lemon juice until well blended.
Add grated egg and stir only until well mixed. Add crab meat and toss until well coated.
TO SERVE:
Spoon crab mixture into peeled avocado halves. Arrange watercress in 6 serving plates, and place stuffed avocados on top. Place wedges of tomatoes on sides of avocados, and garnish with chopped parsley, or dust with paprika.
