Recipe: Corn Bread Tamale Pie for Ellen

CORN BREAD TAMALE PIE

1 pound ground beef
1 chopped onion
SAUCE:
1 (14 ounce) can crushed tomatoes
1 cup whole-kernel corn, drained
1 cup water or stock
1/2 cup seeded and chopped green pepper
1 tablespoon chili powder or to taste
1 teaspoon salt
1/4 teaspoon pepper
TOPPING:
1 1/2 cup cornmeal
2 tablespoons flour
2 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon salt
2 eggs, beaten
2/3 cup milk
2 tablespoons vegetable oil

Brown beef and onion in a pan; drain.

Add sauce ingredients; simmer for 15 minutes.

Preheat oven to 425 degrees.

Mix dry topping ingredients. Stir in eggs, milk, and the 2 tablespoons oil.

Place meat mixture in a 2-quart casserole and cover with the topping.

Bake 20 to 25 minutes or until corn bread is brown.
