Recipe: Cranberries Amaretto

Cranberries Amaretto

Our all-time favorite, from a Bon Appetit of many years ago (perhaps 15 years ago) is Cranberries Amaretto. Sensational.

1 1/3 cup water
1 1/2 cup sugar
1 tsp. ground ginger
2 pears (peeled, cored, and diced)
4 cups cranberries (washed and de-stemmed)
juice and grated peel of 2 lemons
1/2 cup amaretto

Combine the water, sugar, and ground ginger in a saucepan - stir briefly until the sugar is dissolved. Boil 5 minutes. Add the pears, reduce the heat, and simmer 3 minutes. Add the cranberries, lemon juice and lemon peel - continue simmering. The recipe says to continue simmering "without stirring" but we cheat and stir a little now and then. Continue simmering until the cranberries pop. Remove from the heat and cool. Stir in the Amaretto (don't forget this step - it's easy to forget you didn't add the Amaretto yet, but you gotta add the Amaretto).
