Recipe: Fancy Cranberry Relish

FANCY CRANBERRY RELISH

2 c. fresh whole cranberries, 1/2 lb.
1 c. chopped dried apricots
1 c. chopped pitted prunes
1 c. toasted walnuts or pecans
2 tsp. grated orange rind
2 c. water
1 to 2 c. sugar

Place water and sugar (the amount of sugar on the sweetness preferred) in large saucepan. Boil the syrup for 5 minutes.

Add cranberries, apricots and prunes. Simmer uncovered very gently without stirring until thick and clear, about 5 minutes.

Skim and add orange rind and nuts. Place in sterile jars and store in refrigerator.
