Recipe: Cranberry Meatballs

Cranberry Meatballs

1 1/2 pounds ground beef
1 egg
1/2 cup minced onion
3/4 teaspoon salt or vege-sal season (sold in some health-food stores)
1/4 teaspoon pepper
1 teaspoon dry mustard
8 oz. tomato sauce
1/2 cup cranberries
3 tablespoons Splenda
1 tablespoon lime juice
1/4 cup water

In a big bowl, combine ground beef, egg, onion, salt, pepper and mustard. Mix until well combined. Form into meatballs about 1 1/2 inches in diameter.

Put tomato sauce, cranberries, Splenda, lime juice and water in a food processor and pulse until cranberries are finely chopped.

Coat a big, heavy skillet with non-stick cooking spray and put it over medium high heat. Brown the meatballs. Pour off the fat and add the sauce. Reduce heat to low, cover and simmer for 30 minutes.

Makes 4-5 servings
