Recipe: Crock Pot Hashbrown Casserole

Crock Pot Potato (Hashbrown) Casserole

This is a crock pot version of what seems to have become a traditional 'hashbrown casserole'. Except the version cooked in the oven calls for sour cream along with lots of cheddar. This doesn't, and it's exceptionally easy. I got this out of a 1970's crock pot recipe booklet my mom gave me years ago.

2 lb. bag frozen hash brown potatoes (the diced kind)
12 oz. can evaporated milk
1 can cheddar cheese soup (I think nacho cheese soup would be good too)
1 can cream of whatever soup (chicken, mushroom, celery - I used the celery... even people who claim not to like it, including myself, never realize it's in there!)
1 can French fried onions, divided

Spray inside of crock with cooking spray. Add soups and evaporated milk and whisk until smooth. Stir in potatoes and half the French fried onions until well mixed. Sprinkle remaining onions on top. Cover and cook on HIGH 3 1/2 hours or LOW 6-7 hours. Serve warm.
