Recipe(tried): Curried Chicken Balls (make ahead and freeze)

Curried Chicken Balls

Makes 4 dozen

1 package (3 ounces) cream cheese
3 Tablespoons light cream or mayonnaise
1 cup finely chopped cooked chicken
2 cups chopped dry-roasted peanuts
1 Tablespoon chopped chutney
1/2 teaspoon salt
1 to 3 teaspoons curry powder

Beat the cream cheese and cream in a medium-size bowl until smooth. Stir in the chicken, 1 cup of the peanuts, the chutney, salt and curry powder.

Shape into 1-inch balls. Roll in remaining cup of peanuts.

To make ahead and freeze: Place chicken balls on jelly-roll pan and freeze until firm. Layer in rigid plastic containers with plastic wrap between layers. Return to freezer. Maximum recommended freezer storage: 3 months.

To serve: Defrost in refrigerator for 3 to 4 hours.
