Recipe: Delta Queen Cake (using cake mix, coconut pecan frosting mix, and cocoa)

DELTA QUEEN CAKE

1 box (2-layer size) yellow cake mix
1 1/2 cups water
3 eggs
1/2 cup margarine, softened
3 tbsp. cocoa
1 tbsp. Crisco oil
1 box coconut pecan frosting mix
FOR THE GLAZE:
1 cup sifted powdered sugar
1/2 tsp. vanilla or almond flavor
1 1/2 tsp. milk
Pecan halves (optional garnish)

Preheat oven to 350 degrees F. Grease and flour a tube or Bundt pan.

Combine cake mix, water and eggs and margarine; mix well. Add dry frosting mix.

Dissolve cocoa in oil and add to cake mixture. Stir until well blended. Pour into prepared pan.

Bake at 350 degrees for 50 minutes. Cool 30 minutes before removing from pan.

Combine the glaze ingredients. Top the cooled cake with the glaze and garnish with pecan halves, if desired.
