Dieter's Vegetable Soup

1 cup sliced celery
1 cup chopped onion
1 cup sliced carrot
1 cup chopped escarole or spinach
1 small bunch parsley, tied up with string
1 cup canned kidney beans, drained
1 1/2 cups canned tomatoes, chopped
1/2 tsp. thyme
2 bay leafs
3 envelopes (or to taste) powdered chicken soup base (I use Wylers)
5 cups water (about)

Put all ingredients except escarole and beans into large pot. Bring to boil and simmer for about 45 minutes or until vegetables are tender. Add beans and escarole and simmer additional 10 minutes. Taste for seasoning--add more chicken powder if needed. This is a great soup for getting those vegetable servings if you are on Weight Watchers or a similar diet, it contains very little fat.
