Recipe: Refreshing Frozen Fruit Salad (using lemonade concentrate)

REFRESHING FROZEN FRUIT SALAD

1 (3 oz.) pkg. strawberry Jell-O
1 cup boiling water
1 (6 oz.) can pink lemonade concentrate
1 (8 oz.) tub Cool Whip, thawed
1 (16 oz.) can peach slices, drained
3/4 cup seedless green grapes
1/4 cup maraschino cherries
2 bananas, sliced 1-inch thick

In large bowl, dissolve Jell-O in 1 cup boiling water; add lemonade concentrate and stir until melted. Chill until slightly thickened, about 45 minutes.

Blend in whipped topping; fold in fruit. Pour into 9x5-inch loaf pan.

Freeze about 4 hours or until firm.

To serve, unmold. Garnish with additional fruit if desired.

Makes 12 servings
