Spinach Salad with Raspberry Cream Dressing

1 (10 ounces) pkg. fresh spinach
2 kiwifruit, peeled and sliced
1 can mandarin oranges, drained
1 purple onion, sliced and separated into rings
RASPBERRY CREAM DRESSING:
1 (10 oz.) pkg. Frozen raspberries, thawed and well drained
6 tbsp. olive oil
1/4 cup whipping cream
2 tbsp. sherry wine vinegar
1/2 tsp. salt
Remove the stems from the spinach. Wash thoroughly and pat dry. Tear into bite-size pieces.
In a large bowl, combine the spinach, kiwifruit oranges and onion. Cover and chill. Serve with Raspberry Cream Dressing.
RASPBERRY CREAM DRESSING:
Place the raspberries in a blender and process until smooth. Pour through a wire-mesh strainer into a bowl, pressing with the back of a spoon against the sides of the strainer to extract out all of the liquid. Discard the seeds.
Combine the raspberry puree with the remaining dressing ingredients and whisk until smooth. Chill. Serve with salad.
