Balsamic vinegar with crushed garlic in it for a while. Oregano and/or chopped basil would add flavor. Whatever herbs you like.

I like my salad to sit in the dressing for a while. Give it a toss now and a while.

Take some fat free yogurt, and whisk in some _good_ quality balsamic vinegar. That's it. Add a tiny bit of Dijon mustard, if you like.

Dijon mustard, salt, pepper, lemon juice, orange juice. Blend well.
Or
Dijon mustard, salt, pepper, curry powder (optional), low-fat yogurt, soy sauce, orange juice.
