Recipe(tried): DONNA- and others GROGONZOLA PORK CHOPS

\GORGONZOLA PORK CHOPS (RECIPE FROM NICK STELLINO'S MEDITERRANEAN FLAVORS)

apple stuffed pork chops
1tbl butter
1 cup chopped peeled apple
1tsp thyme
1/4 cup crumbled Gorgonzola cheese
4 pork chops, 1-1/2 inches thick ( I use 1 1/2" boneless)
1/4 tsp salt
1/4 tsp black pepper
2 tbl olive oil

For the Apple-stuffed Pork chops, melt the butter in a small saute pan set on medium-high heat until sizzling, about 1-2 minutes. add the apple and thyme and cook until soft and beginning to brown, about 3 minutes. transfer the apples to a small bowl and stir in the Gorgonzola. Set aside to cool.

Insert a thin-bladed knife in the side of each chop and cut a pocket that's almost the same size as the chop. ( I have the butcher do it )fill each pocket that's almost the same size as the chop. fill each pocket with the cooled apple stuffing. Don't overstuff the chops, as excess stuffing will fall out during cooking of chops.

To prepare the Gorgonzola sauce;

1 1/2 tsp butter
2 garlic cloves, thickly sliced
3/4 cup chicken stock
2 tbs whipping cream (I use milk but cream probably better)
1/2 cup crumbled gorgonzola cheese
1/4 tsp black pepper
1 tbl chopped fresh Italian parsley

cook the butter and garlic in a small saute pan set on med-high heat for 1-2 minutes until begin to brown. Add the chicken stock, cream, gorgonzola and pepper. Boil the sauce for 10 minutes or so until reduced and thickened. Stir in the chopped parsley.

Grill the pork chops (first rub grill with olive oil) place grill 4-6 inches from med-hot coals. Grill for about 3 minutes each side, until juices run clear. Transfer the chops to a serving platter and serve with the sauce on the side.
NOTE; I HAVE ALLWAY BROILED THE CHOPS (easier I think) BROIL FOR 4-5 MINUTES EACH SIDE ABOUT 4-6 inches FROM HEAT SOURCE SAYS YOU CAN SAUTE, COVER AND COOK CHOPS 4-5 minutes each side.

THIS SOUND LIKE A LOT OF WORK BUT REALLY IT ISN'T AND ITS GREAT YOU CAN STUFF THE CHOPS DAY BEFORE AND EVEN DO THE SAUCE. JUST COOK CHOPS AS STATED ABOVE AND RE-HEAT THE SAUCE IN MICRO TO HEAT (don;t overcook sauce in micro)
