DUTCH OVEN STEAK
Trim fat from edges of beef. Place on a sheet of plastic wrap. Rub both sides of beef with the garlic. Sprinkle with salt, pepper and flour.
Top with another sheet of plastic wrap. With the flat side of a mallet, pound meat to about half its original thickness. Cut into 4 equal pieces.
Heat oil and butter in heavy Dutch oven. Shake off excess flour from meat. Brown pieces on both sides quickly.
Add remaining ingredients to the pot. cover.
Bake at 325 degrees F for 1 1/2 to 1 3/4 hours until meat is very tender.
Sprinkle with parsley. Serve directly out of the cooking pot.
GOOD SERVED WITH:
Buttered noodles, green salad, freshly baked whole wheat bread.
